Maintain all compliance and regulatory requirements for Gaming, Liquor licensing and Crowd Control and assist the General Manager of Food and Beverage in the effective control of the beverage supply, pricing and inventory.I currently deal with all brand supplier representatives in the beverage section for the food and beverage department Island wide.Other duties include:- Maintain a high standard of Food and Beverage service ensuring guest satisfaction.- Ensure all areas of responsibilities achieve financial goals.- Ensure the effective management of all resources - COS, labour/payroll and miscellaneous expenses- Ensure waste is minimised.- Effective management of pricing, inventory and stock control of all beverages.- Ensure all procedure manuals are current.- Ensure all Food and Beverage SOP’s (Standard Operating Procedures) are communicated and delivered.- Constantly manage succession planning ensuring a high level of staff retention and highly skilled management team.- Maintain the Beverage Matrix and set an effective strategy in managing all beverage products.- Ensure all beverage products are received, stored and maintained effectively.- Ensure that all maintenance issues are identified and reported.- Ensure a high standard of cleanliness and orderliness in all beverage outlets (17 Outlets in total).- Maintain a high standard of professionalism for all outlets entertainment, promotions and events.- Responsible for the management of all events and coordination of all Entertainment.- Responsible for the introduction of an external security company to the island and maintain a high level of safety.**Returned to this role after a 2 year working holiday.

In conjunction with the Food and Beverage Manager, I was responsible for day-to-day operations of the business outlet, working closely together, to ensure the businesses financial, operational, legislative and service aims are achieved while maintaining a high level of guest satisfaction.Other duties include:- Total Management responsibility for the operations of these outlets. Coordinating production and service within the outlet to achieve a consistently high standard of service and product, thus ensuring customer satisfaction.- Ensure that all outlet staff duties are performed according to company standards and procedures.- Responsible for the outlet achieving budgeted profit through monitoring product, labour cost and wastage.- Prepare staff rosters at least 7 days in advance according to forecasted occupancy and events to ensure prompt service whilst controlling wage costs.- Responsible for the recruitment of staff.- Develop marketing and promotional plans to achieve extra revenue.- Directly responsible for the alarms and security systems for closure including the training of supervisors.- Ensure Eftpos transactions, float balances and cash reconciliation is performed according to company policies and procedures. Ensure all discrepancies are reported with detailed explanations.- Process Stock requisitions in accordance with stock par levels.- Appraise, encourage, coach and counsel staff utilising a performance review system, ensure frontline performance reviews are conducted for probationary and annual reviews; correct performance issues and counsel as required.
