I took a chance at a life-long passion, cashed in my 401K, rented out my house, moved to San Francisco, and enrolled in culinary school. For 7 days a week over 3 years, I worked on the line, managed inventory, developed menus, and trained staff for a myriad of food and bev businesses including food trucks and carts, private and high-end catering, farm-to-table restaurants, and a neighborhood grille.My time spent in a professional kitchen has provided the grit needed to excel in the business world. A deliverable was due daily. Every night was an opportunity to speak to and influence your customer journey. Everyday was an operational juggle: did anyone call in sick? Are our tools working? What excess do we have and what special can we create from this that is in line with our style and customer need? What is our food inventory and what do we need to order this week? What can wait until next week? What is our food cost % and can we reduce this to increase profit margin without sacrificing quality? I loved family meal. I loved the camaraderie. I loved the energy.
