Berkeley Scott recruits within the catering and hospitality field. With a large and well established client list I recruited for Berkeley Scott for the last 5 years. I progressed within the company and my last position was managing the Guildford office. After much deliberation it was important to my husband and I to return to the industry we loved so much. We bought the lease on a small premises in Godalming, Surrey in June 2002, through Punch taverns. We made a decision to buy the worst pub in the best street. I had worked part time within the pub on an ad-hoc basis during my degree and knew what potential it had. Currently trading at 2-3K a week, with bad stock deficient, poor food offer and disillusioned customers we had our work cut out… Show more After much deliberation it was important to my husband and I to return to the industry we loved so much. Within 3 months I had stock variances turned around by retraining staff, implementing better security measures, running line checks and void reports. I employed a new team which carried out there duties to a high level and improved general standards of the bar and restaurant area. We had to re-furbish the whole premises, but could not afford to shut to do so therefore we would paint a wall, strip a floor or varnish tables during closure times of 3-5pm and after 12pm at night.With a great chef on board, we revamped the menu , introduced table service and turned the pub into a quality gastro operation (68 covers) With a formal dining area (seating 30) on a Friday and Saturday night, that was fully booked on weekends up to 2 weeks in advance. The pub turnover was £6K a week by the end of our 3rd monthUnfortunately in our 13th week in the pub we lost the kitchen to a devastating and very frightening fire. Our kitchen was out of action for 12 weeks but un-deterred we had BBQs at the weekends and also allowed guests to order a takeaway to eat in the pub whilst our kitchen was shut. On leaving the Charterhouse the turn over was between £6-7K a week. I made the decision to leave the front of house aspect for the Charterhouse on a full time basis in December 2004 after I accepted a role with Berkeley Scott Recruitment. However I continued to work within the pub as well as manage the full BOH operation until we sold the lease in June 2005. Show less
