As a graduate student at Vascular Biology Laboratory, Jean Mayer USDA HNRCA at Tufts University.I focused on role of dietary antioxidants, lipids and oxidative stress on molecular mechanisms of immune/endothelial cells interaction in angiogenesis and obesity.Detail:This research project mainly focused on the effect of the consumption of dietary antioxidants curcumin on angiogenesis and obesity. Curcumin is an active ingredient in turmeric, a common cooking spice. I diligently started to investigate the effects of curcumin on obesity; in vitro cell culture system and an in vivo animal model of diet-induced obesity. In that study, in addition to carefully investigating the effect of curcumin supplementation on angiogenesis, I meticulously studied the effect of curcumin on adipocytes differentiation, apoptosis and gene expression of several key enzymes including AMPK, ACC, CPT-1 and GPAT-1 and transcription factors (PPAR-γ and C/EBP-α) that are involved in energy and lipid metabolism in cell culture system. Then I tested the effect of curcumin on body weight gain and adiposity in mice fed high fat diet.
