The in-between is securing the contract and deposit, producing all the production sheets to ensure delivery of everything needed (food, equipment, staff, etc.), finalizing details with the client and/or venue, and preparing key staff for their upcoming duties. Of course, an important part is following up with each client to ensure satisfaction and to maintain a long-lasting relationship. I love the variety, doing everything from small, intimate dinners in a client's home to 1000-person events with multiple, complex logistics.
