Undertaking a range of different roles, I was responsible for the day-to-day operations of the vineyard and winery. Tasks in the winery include fruit intake, fermentation management of fruit, barrel management and sanitation, filtration and analysis for wines pre bottling, Implementing and setting up Vintrace and Grapelink wine and vine software. Implementing SOP’s for processes and site risk management for OH&S, collaborating with worksafe to provide optimal outcomes for the business. In the vineyard I was required to undertake implementation of the spray program set out by our viticultural consultant, as well as pruning, shoot thinning, canopy management as well as general management of the vineyard. During this time, I was always identifying and implementing ways to improve quality and efficiency in both the vineyard and the winery.

In addition to previous role responsibilities, as Senior Cellar Hand my duties included supervising and supporting Cellar Hands, implementation of policies and procedures and liaising with Wine Makers. In addition to my responsibilities, I am proactive at identifying opportunities to increase efficiencies, consistently shaping and contributing to positive staff culture and modelling growth mindset.

Processing of grapes through to tirage and dose preparation for bottling, pressing and floatation, transferring and racking of juice and wine, filtration, centrifuge operation, waste water management, additions, Sulphur and sugar analysis, yeast counts, pH and TA analysis, alcohol analysis, general hygiene assessment, barrel work, following phylloxera protocols, Risk Analysis and writing and reviewing Standard Operating Procedures (SOP), training vintage casuals, supervising new staff.

Responsibility for liaising with wine makers and sellers to purchase stock based on demographic of clientele, stock management, process invoices, social media, liaising the bar staff to devise regular changes in wine list, assisting clientele with wine, beer and spirits selections, maintaining shop front and stock presentation. In addition to my responsibilities, I self-directed the role to a significant extent, taking every opportunity to learn new skills in wine marketing, purchasing and sales.
