I inspect the retorts for mechanical defects. I ensure that all of the tracking and accountability information matches for all products that day. I load, and start the retorts while documenting the appropriate tracking data. I monitor the cook cycles, and document CCP's during all stages of production. If a problem occurs, i contact management for further instruction, and implement the plan prescribed. After the cycle is complete i unload the retort, and ensure it's readiness for the next cycle.

Ensured the food safety of the bacon bits department through a series of tests. This included confirming that the bacon was properly cooked, which was the CCP of the product. I documented the results of aforementioned tests. If any problems were detected, i would notify the production supervisor and the quality control supervisor. Once a corrective plan was decided upon, i would help oversee the plan's implementation and ensure that product was once again within specifications.
