Insects are considered food by billions of people worldwide yet in the United States we don’t eat insects due to an unwarranted cultural bias. In fact, our distaste for insects goes so deep that until recently, feeding fish insects was illegal if the fish were intended to be sold as food. Insects are a natural food for fish and we have been eating both for centuries.Our southern neighbor, Mexico, enjoys nearly 200 different edible insects. Thailand has over 20,000 insect farms and one of Cambodia’s top exports is edible insects. The Mopane Worm is considered a delicacy in Zimbabwe, the Witchety Grub in Australia, Queen Ants in Columbia. It’s obvious that here in the United States and Canada, we’re the ones missing out.Eating a whole cricket is tough but adding cricket powder to your baked goods is easy and it adds hard to get prebiotic fiber, Zinc, B12, a perfect Omega 3:6 ratio and a super source of antioxidants to breads, cookies and other baked goods.We believe chefs are the answer. It presents a challenging new culinary adventure. Once people experience edible insects, they'll be more open to adding them to their diet. It’s personal too. By the time my kids are my age, there will be half again as many people on our planet and meat production will need to double. This is not possible. Food insecurity is a major cause of strife and war. Edible insects, already consumed by billions of people worldwide, is one answer.Recently, attitudes are changing as science begins to show us the significant health and environmental benefits of insects as food and feed. Coupled with the concern over factory farms and inhumane treatment of livestock, edible insects makes sense.
