Pub General Manager

General Manager at The Wotton Hatch in Dorking, part of the MItchells & Butlers Premium Country Dining Group, averaging £22,000 a week revenue on a 70:30 split in favour of food. I manage a team of 8 back of house and 15 front of house staff to achieve, and regularly surpass, our KPI targets. In the first 5 months I took this pub from £24,000 behind profit budget to end up the year £22,000 ahead of budget. Then in my first full financial year (sept 13 - sept14) I was over £75,000 ahead of profit target and over £50,000 ahead of sales target.

I worked for two different General Managers during the two year period I worked at The Spring Tavern as Deputy Manager. I also held the pub for 4 month period between January - April 2012. During my time at The Spring Tavern I helped grow sales from an average of £18,000 revenue to an average of £28,000 revenue on a 60:40 split in favour of food.

I moved across to the Tudor Rose before the opening, I was involved in the pre-opening training of all new members of front of house staff. As well as the pre-opening training, I was also involved in the marketing of the newly refurbished pub.
