As a Chef, my career has always been inspired by the true quality and flavors of fresh foods. My roots are in American food, growing up with the farm-to-table concept in Traverse City, Michigan. I went hunting and fishing, and spent summers with my grandma in Windsor, Ontario. From humble beginnings as a sous chef in the Midwest, I developed relationships with farmers and purveyors across the country learning the importance of using fresh ingredients at the peak of their season. As a result, I am driven by a passion to bring exciting American ingredients farm-to-table with dedication and flair.I owe my success to mentors Barbara Kafka, James Beard Joe Baum who I worked with early on in my career at The American Restaurant. It's with great joy that I return the favor by mentoring up and coming chefs.
