Managed financial operations of two fine dining restaurants located in TriBeCa: Dylan Prime, a 150-seat modern steakhouse (peak sales of $5.7 million in 2006) and Devin Tavern, a 175-seat New American tavern ($2.8 million in sales for 2007, closed in 2008). Worked closely with two additional operating partners overseeing all aspects of menu development, public relations and marketing strategies. Responsibilities included cash management, accounts payable, cost of goods sold and labor analysis, financial forecasting, raising capital, and providing investors with quarterly financial reviews. Developed and delegated key responsibilities and practices to management teams to ensure smooth flow of operations.

Opened 150-seat freestanding restaurant. Hired, trained and developed staff of 32 front-of-house employees; achieved a 26% labor cost, handled all inventory purchases. Implemented cocktail program focused on classic libations of the early twentieth century. Organized weekly wine and spirit seminars intended to develop staffs’ knowledge of various products and increase sales.

Managed 188-seat restaurant that grossed $10.3 million in FYE 1999 and earned a 17% net profit margin. Hired, trained and developed staff of 55 front-of-house employees; achieved a 31% labor (unionized) cost. Provided daily financial analysis of restaurant operation, and handled all inventory purchases for a $2.5 million beverage program; achieved 27% beverage cost. Designed specialty cocktail menus, organized wine and spirit seminars.

Developed business plan to import wines from South Africa into the New York Tri-State region. Established relationships with vineyards in order to secure sole representation within the United States. Created business plan for a Venetian-inspired wine bar. Marketed concept to investor group, sited location, negotiated lease, and secured preliminary approval for a $100,000 guaranteed term loan via the Small Business Administration. Received initial commitments of $1.5 million from private investors.
