Dr. Brady Carter is the Chief Scientific Officer at Carter Scientific Solutions. He specializes in water activity, moisture sorption, shelf life stability, plant science, wheat production, and wheat quality. Dr. Carter earned his Ph.D. in Crop Science and Food Engineering and M.S Degree in Cereal Chemistry and Crop Science from Washington State University and a B.A. Degree in Botany from Weber State University. He has 23 years of experience in research and development and previously was a Research Professor at Washington State University focusing on wheat end-use quality. He has been the instructor for seminars in over 23 different countries and has provided on-site training for companies around the world. He has authored over 20 white papers, participated in hundreds of extension presentations and given presentations at numerous scientific conferences. Dr. Carter has pioneered work in using Dynamic Isotherms to investigate product stability and establish critical water activities for optimal shelf life. He also specializes in shelf life loss and effective utilization of instrumentation to address product safety and quality issues. In his spare time, Dr. Carter enjoys visiting historical military sites and learning everything he can about them. He has had the privilege of visiting sites all over the world and hopes to see many more.
