Rustica was established in 2012 in Fitzroy by Founder, Brenton Lang. Delivering artisan breads and pastries baked using traditional sourdough techniques. The bustling Brunswick Street location fast became one of the most successful and recognised bakery-cafes in Melbourne.Following the opening of the Brunswick St location in 2012, 9 Rustica locations have opened throughout Melbourne. A range of settings have been tried and tested along the journey - streetscapes, indoor shopping centres, the base of residential apartments and the base of corporate towers, all of which have been successful. Each location features it’s own distinct flair and has been designed to reflect the demographic of the area with the backbone of Rustica following through each site, delivering excellent service, a fresh vibrant menu and Rustica artisan breads and pastries.In December 2019, the 500sqm metre Bakery/Cafe in Melbourne's most iconic retail strip, Chapel St South Yarra was complete. Outgrowing their humble little bakery in Brunswick St, Fitzroy, Rustica's new flagship site consists of 165 seats, an open kitchen and bakery with over a million dollars worth of bakery machinery. Rustica are now in a position to supply their wholesale demand and expand retail sites.First Love Coffee is Rustica's very own specialty coffee brand. Established in 2018, their aim to provide excellence in a cup with full control over their coffee from sourcing beans to the final cup. First Love now have a dedicated, knowledgeable team roasting and delivering half a tonne of First Love Coffee weekly.In November 2021 the restoration of Hobsons Bay Hotel was complete. A modernised Pub, featuring a multi-story entertainment space including a Pub Bar, Restaurant, Private Dining, Catering, Events and Rooftop Bar.In 2021, Brenton and team opened the First Love's flagship store in Collins Arch. First Love Collins Arch is a standing-only café designed for on-the-go workers who want quick but quality coffee and food.Currently in the design phase is The Flying Duck Hotel (Prahran). The concept will consist of a dining room, a public bar and a leafy beer garden. Aiming for completion by Q3 2022.
