Working directly with the Executive Pastry I managed a team of 25 staff members that make pastry for 18 different outlets. We make all different varieties of pastry for the hotel including breads, pastries, gelatos, specialty cakes, and showpieces. We have banquets and concert venues all year long and have done banquets of up to 3000 people. We do a lot of specialty events and other gourmet food shows.
