The Charter Oak is the casual concept from Chef Christopher Kostow of The Restaurant at Meadowood. My role as the Wine Director is to oversee and manage all aspects of the beverage program as well as the team of sommeliers. The duties required by the program included: meeting monthly sales goals, purchasing wines for the list and by the glass under a budget proportional to monthly sales, tracking cost of goods sold, counting monthly inventory and tracking profit and loss. I lead the team of sommeliers to ensure daily success in the operations of the restaurant and sales; in addition I also created an education program dedicated to their growth and advancement in the industry and to further their certification levels.

Stony Hill Vineyard is a legendary Napa winery that was purchased by Lawrence Wine Estates at the end 2020. I was hired as Hospitality and Education Manager with the direct responsibility to engineer a new sales program from the ground up, to hire and train winery hosts to sell wine directly to consumers on the winery property and to oversee and report all financial aspects of the sales program including: meeting monthly quotas, profit and loss and cost of goods sold. This role quickly expanded into overseeing winery and hospitality residence renovations and repairs to ensure the long term success of the program.

The Restaurant at Meadowood is Chef Christopher Kostow’s three Michelin starred flagship in Napa Valley. The Restaurant focused on a daily ten to fourteen course tasting menu built around its five-acre farm in St. Helena. I was one of two sommeliers at The Restaurant and I was involved in every aspect of the wine program including: sourcing and curating the 2900 selection wine list, selecting and sourcing wines for two different daily pairings, managing the wine lists, monthly inventory, costing evaluations for by the glass, pairings, and bottles for list pricing and monthly analysis; and nightly service in the dining room. Service at The Restaurant was executed with a small, tight knit staff. Therefore, it was expected that, as a sommelier, I was also performing the functions of every other position within The Restaurant to ensure nightly success. The Restaurant was destroyed in the September 2020 wildfires in Napa Valley.

Greater Denver Area

Tavernetta Denver was the first Frasca Food and Wine Inc. off-site expansion outside of Boulder. I helped open the restaurant as a sommelier. Opening duties included writing staff training manuals pertaining to wine and service in general, designing the layout of the wine cellar, and three weeks of staff training through all forms of service prior to opening. After opening the restaurant I was responsible not only for duties pertaining to working the floor and sales of the bottle list; but, also for ordering by the glass wine and wines for the bottle list, leading daily line-up for wine, updating the wine list daily, pricing all wines on the list, cellar maintenance, monthly cellar inventory, and glassware inventory. In addition to the maintenance of the program, I lead staff education classes based on classic wine regions of the world and conducted testing and blind tasting for staff members moving through all levels of the Court of Master Sommelier’s exams.

Frasca Food and Wine is the creation of Master Sommelier Bobby Stuckey and James Beard award winning chef Lachlan Mackinnon-Patterson. The restaurant focuses on the food and wine from the region of Friuli-Venezia-Giulia as well as encompassing various other Northern Italian elements. The Frasca model for front of house employees is that everyone must start at the bottom regardless of past experience. Due to this, I began as a reservationist in the back office and climbed through every front of house position to finally arrive at sommelier. As a member of the wine team, I was invited to all distributor tastings and meetings, was responsible for monthly wine and glassware inventory, and worked extensively to reorganize our cellar system in September 2016 as well as regular maintenance to ensure long term organization.
