In September of 2019, my wife and I opened a Southern BBQ Food truck. We spent the summer building it out of an enclosed cargo trailer. We had a very successful and busy first couple of months, doing 12 events in a span of about 8 weeks.In October of 2019, we took over an existing restaurant space that was in need of some love. We completed a full renovation of the existing space, including new electrical, removing existing interior walls to expose beautiful wood beams and high ceilings, and installation of new wall coverings, as well as a much needed coat of paint. We opened February 29, 2020 under our Hickory Street brand, serving our signature Southern BBQ, including brisket, pulled pork, ribs, mac & cheese, and dill pickle coleslaw, as well as some other home-style foods (such as baked beans, dill corn, and the ever-popular gooey butter cake). We moved into a bigger space in Lethbridge in 2023, where we again completed renovations to bring the space in line with our vision.We had an amazing opportunity to move to North Carolina to help our son pursue his dreams of playing NCAA basketball, so we ceased operations in October of 2024.

I assisted in the training of new employees and helped ensure the sales team was meeting our monthly sales objectives. As a teller I was the highest grossing salesperson for at least 6 months.
