Retired effective March 1, 2022Bruce joined McDonald’s in November 1998, as Senior Director, US Quality Systems responsible for the development and deployment of quality systems for U.S. food and packaging suppliers assuring McDonald’s high standards for food quality and safety are provided “Across the Counter” to the customer. Since joining the global team in 2002, Bruce has lead initiatives within the global quality systems function, focused on quality management system development and deployment across a network of global protein suppliers, acted as McDonald's first animal health and welfare officer, and has led policy development and implementation for the responsible use of antibiotics in McDonald's chicken and beef supply chain.Bruce holds patents (6) for innovations resulting in restaurant simplification involving frying technology, cooking and holding systems. Bruce current serves as Senior Director Global Quality Systems - Protein, responsible for beef, chicken, pork, fish and dairy - from the farm through the conversion of raw materials into products we serve at our restaurants. Bruce is a graduate of the Pennsylvania State University with a BS in Animal Science and has completed advanced course work at the University of Edinburgh, Edinburgh, Scotland in International Animal Welfare, Ethics and LawSpecialties: Quality systems development, product and process optimization, equipment innovation, animal health and welfare, supplier self-managed excellence.
