Acted as facility specialist with oversight of many functions within the retreat center including lunch service on an 84" Huckins Sportfishermen yacht, videotaping client fishing experience, waiter/bartender duties at the lodge, cleaning of guest rooms, laundry, pool maintenance, kitchen oversight and landscaping duties. Position evolved into trained chef role for the resort. In the off-season, performed maintenance duties such as sanding, painting, and cleaning of entire facility.• Facility specialist, with oversight of lodge cleaning, car washing, laundry for 6 bedrooms, pool cleaning and landscaping of 1.5 acres. • Served clients breakfast (specific order or continental), lunch (specific client order), dinners including appetizers (modified for various tastes, vegan, gluten free, etc.), cocktails and desserts.• As chef, prepared all meals for 10 guests plus staff including weekly food purchasing, meal planning, preparation, and cleaning.

Hired as facility specialist to serve executive clients of Halliburton Duck Key Lodge, corporate retreat. This includes but not limited to escorting executive wives to activities, video recording of fishing catch on yacht, bartending, food preparation and service on yacht. Afterwards serving dinner and bartending back at Lodge.. Assisting in the kitchen and performing turn down service for clients. On corporate yearly hiatus, continued with on going maintenance of the Duck Key Lodge including sanding, painting and general maintenance and cleaning of Lodge.

Manager Ships Pub Galley, responsible for hiring, firing, training and scheduling of personnel. Duties also included ordering supplies, (food, liquor, equipment). Responsible for live entertainment: bands and DJ's. Associated with menu planning, budgeting, inventory control. Reason for departure, laid off with new owners cut back of personnel.

Performed all duties associated with food and beverage service from cook to waiter, to bartender and cashier to co-manager in May 1982, until Indies Inn & Yacht Club was sold in 1983 and became Hawks Cay Resort
