I was mainly in charge of soups and sandwiches. All soups were made from ingredients often purchased from small, local markets the day or evening of preparation. All soup stocks were made from scratch and meats for soups and sandwiches were cooked and carved in-house. I also made vegan and vegetarian options as well. I catered on behalf of the company a few times for events. It was partially owned by Graham Kerr, perhaps better known as the Galloping Gourmet. During at least one catered event, I prepared and served his recipes exclusively.
