I am a second year master’s student with the Center for Meat Safety & Quality in the Department of Animal Sciences at Colorado State University (CSU). Under the advisory of Dr. Mahesh Nair, I will graduate from this program with an M.S. in Animal Science in the early spring of 2021. I received a B.S. in Food Science, Technology, and Engineering from Jiangnan University in Wuxi, China; where I became the first American student to graduate with honors from the Food Science program. I am fluent in Mandarin Chinese and have experience in verbal and written translation. At CSU, I am currently performing a nutritional study on several plant-based meat alternatives (Impossible Foods Burger, Beyond Meats Burger, etc.) and animal-derived meat product. I have gained experience in bovine and porcine farms, feedlots, slaughterhouses, and processing facilities performing inoculation challenge, in-plant validation, and animal welfare studies. I also have gained experience performing food safety studies targeting common foodborne pathogens on produce, poultry, and meat.
