• Coordinate the planning, operation and control "BCIC PROTOTYPING LAB", which is made up of 9 Laboratory Technicians, as well as the BCIC Pilot Plant and the TECH CENTER Food Safety Program made up of two project leaders and a multidisciplinary maintenance team, warehouse , facilities and cleaning.• Leader of compliance with AIB (AMERICAN INSTITUTE OF BAKING) AND FSMA (FOOD SAFETY MODERNIZATION ACT) standards. • Maximize the use and savings of budgets within the operations.• Design and implement the first formats and guidelines of the area to optimize the control and flow of processes.• Systems implementation: HACCP, FOOD SAFETY PLAN, FOOD DEFENSE, FOOD FRAUD.• Ensure compliance and monitoring of health and safety protocols.

• Ensure the development of a new product in the area of fruits and vegetables according to quality and health guidelines.

• Participate in different activities in the Sensorial area for the development and innovation of products.• Manage consumer insights and results information.

• Participate in activities and projects of the internal Quality Assurance area and of the Oxxo client to ensure their positioning within the stores.
