I am Biologist, Ph.D. in Engineering, and Postdoc in Fermentation Processes at INRA France (medium chain fatty acids production), with experience in several bioprocesses, as hydrogen and ethanol production, fermented beverages, and probiotics.Passionate about innovation in biotechnology, during my second Postdoc I have developed a craft beer with probiotics. My previous experiences include to be the responsible by all processes in a wine production for 10 clientes (B2B), besides the tecnical responsbile in a brewery where I performed yeast recovery (2,000 L scale), reducing the cost of raw material more than 15% and eliminate the waste with yeast in 1/5 of the brewing.
