As the lead manager, I am responsible for the assignment, direction and delegation of daily and weekly duties of a staff of 15. To that end, I use data driven methods to ensure consistency in product, staffing and customer service throughout the year. My duties include the daily balancing of company ledgers, proper tracking of sales and the hiring, training and supervision of staff.

Responsible for product ordering to par levels, nightly menu specials. Involved with menu creation, staff management and new employee training.

The head baker is responsible for the actual mixing, measuring, portioning and baking of all the breads for 3 separate restaurants, all while keeping in line with stated company standards. As the trainer, I have been responsible for training other bakers within the company in cities across the West Coast.

As the sous chef at the premiere restaurant in the historic district of Beaufort, SC, I was responsible for the creation of a rotating set of specials, management of kitchen staff and the creation and adherence of food and safety standards.

Responsible for kitchen operations in conjunction with the head chef including special functions and events.

Responsible for all day to day operations with a weekly, seasonal menu for a select clientele. More available upon request
