The restaurant has 170 covers and took an average of £40,000 to £50,000 a week. My areas of responsibility in this role were the day to day running of the restaurant, food safety, ordering and stock control, training of 35 staff members, recruitment, finance with regard to labour, GP and P&L reports, awareness of hitting and exceeding budgets and general.
