Customised Food Industry Training Ltd provides services in food technology, and food safety and quality. Working across the food industry with large enterprises and SMEs in a broad range of sectors, including dairy, meat, bakery, ready-meals, fruit and vegetable, soft drinks, brewing and distilling. Our expertise in process trouble shooting, and solving quality and safety problems in food production operations has helped our clients to reduce waste, improve production efficiencies, and improve food safety and quality controls. In particular, we help food and beverage companies, and related suppliers, to comply with regulatory requirements including HACCP and Good Manufacturing Practices (GMP), and to achieve accreditation to external standards such as the BRC Global Food Safety Standard, ISO 22000, ISO 9000, FEMAS, and the Bord Bia Quality Assurance Schemes. Co-supervised by Professor D. J Buckley (UCC) and Dr. B.T. O’Kennedy (Teagasc), and awarded in 1998. Lectured to undergraduates studying Degree programmes in Food Science and Technology, and Food Business. Modules included: Food Technology, and Food Quality and Safety. Post-doctoral researcher on national, EU and privately funded projects in food processing and food safety, across dairy, meat, brewing and distilling applications. Design, commissioning and operation of pilot-scale food processing equipment in the Food Science and Technology Faculty at UCC. Establishment and management of new brewing analytical and research laboratories. Supervision of Ph.D. and M.Sc. brewing research projects and collaborative research, analytical work and training.

Consultant plant science and biomass specialist working for Dr. Sean McCarthy of Hyperion Energy Systems on projects funded under the JOULE programme, investigating the development of biomass production and processing techniques. Collaborated with the European Miscanthus Network and Trinity College Dublin from 1989 to 1994 to determine the potential and actual yield of Miscanthus in European sites, to define relationships between yield and climate parameters and thus establish a production model and to quantify the interest of these crops at EC level. The related projects were funded under the EU FP3-JOULE 2 Programme for specific research and technological development programme in the field of non-nuclear energy, 1990-1994.
