As Complex Director of Operations, we led the launch of South Africa’s first on brand Marriott Hotel and Marriott Executive Apartments, setting a new standard in luxury hospitality. Our pre-opening team navigated complex logistics and cultural nuances to establish Marriott as a trusted name in the region—building not just hotels but meaningful connections and economic growth.

As F&B Director, I drove the dynamic food and beverage scene at Sandton Sun, one of South Africa’s busiest culinary hubs. Beyond the hotel, I played a key role in shaping the Sandton Mile, including the Sandton Convention Center, Sandton Towers, and Garden Court Sandton City. This was about more than operations—it was about crafting exceptional guest experiences, inspiring teams, and setting F&B standards that elevated guest satisfaction and boosted revenue in ways that sparked conversations.

Dubai

In this role, I strengthened F&B operations for regional hotels and branded restaurants, including launching Mr. Toad's Pub & Kitchen. Strategic revenue management and project oversight were essential, as I led a hotel opening, managed three refurbishments, and made key operational decisions, like the closure of a restaurant. I also managed strategic relationships with hotel brands, property developers and restaurant groups, ensuring mutual value and alignment.Building strong partner relationships was pivotal, setting the foundation for lasting collaborations. Major events like the Dubai Rugby 7's and Taste of Dubai served as platforms to showcase our capabilities, while financials guided us toward sustainable, profit-driven growth.

While taking a career break, I couldn't resist the opportunity to contribute to the F&B landscape and stepped in as an F&B Specialist and Deputy General Manager for Southern Sun Abu Dhabi. My role was anything but passive; I was deeply involved in several key areas.Procurement? I fine-tuned our sourcing strategy to align with both quality and cost-efficiency. Recruitment? Hired the right people for the right roles, ensuring the team was set up for success.Forecasting and Revenue Management were also on my plate. I didn't just predict trends; I prepared us for them, implementing strategies that boosted revenue while managing costs effectively.In essence, this wasn't a break; it was a pivot, an opportunity to zoom in on specific aspects of F&B and hotel management to drive results.

The Old Town, Downtown Burj Khalifa, Dubai

As Complex F&B Director for Southern Sun's flagship properties—Al Manzil and Qamardeen—I wasn't just maintaining the status quo; I was breaking new ground. I took the helm with 4 revenue points and pushed that number to 9. Growth? You bet.On the revenue management front, I was all in. Setting targets, adjusting strategies, and making sure we not only met but exceeded financial expectations.Concept development and project management were also big pieces of the puzzle. I spearheaded the launch of three new outlets and a Conference Centre, each one filling a unique market gap.The role also had a mentoring aspect; coaching the next generation of talent was part of the package. It wasn't just about guiding them; it was about unlocking their full potential.Marketing wasn't an afterthought; it was integral. Finding the right channels, crafting the message, and making sure we were not just visible but memorable.And fiscal management? It was about smart spending and smarter saving, creating a sustainable roadmap for long-term profitability.
