"A recipe has no soul. You, as the cook, must bring soul to the recipe." - Thomas KellerI was born to cook and become a great chef one day. I believe that this is my purpose and destiny on earth!I have loved food & cooking all my life. I grew up in a restaurant that my mother worked at, and when I wasn't there, I was with my grandmother who always cooked or my father that worked on a farm.I started working in the restaurant my mother worked for at age ten as a dishwasher. I then became a prep cook, short order cook, & line cook. I also worked as a server at catering events. My love for cooking was found here. I did this up until the owner retired & closed the restaurant. My love for food came from seeing where it comes from, the farmers. I worked on a farm with my father & learned a lot. From seeding, planting, growing, harvesting, & selling the produce we created. The farm also had a bakery on it for baked goods that we would sell as well at different farmers markets; Union Square NYC, New Rochelle NY, Peekskill NY, Beacon NY, and Stormville NY.Passion comes from my grandmother. Every holiday my grandmother would cook something to bring but Christmas was her holiday which was held at her house. She did all the cooking, every year and didn’t want help. What has stuck with me the most about her is the stories family told about her cooking for 400+ people at her own wedding! I believe Steve Harvey said it best, “You Gotta Jump To Be Successful! If you don’t jump, you will never know what you were born to do. You were born with a gift; this gift is your parachute. You have to jump and open it but, it will not open right away the first time. Sometimes it takes a couple of jumps to open.” I leave you with this; I am Brian Wolfe, I have a gift and that is cooking! I have been told by a couple of my chef instructors that I even have a rare gift. This rare gift is not only do I cook great, but also a great baker, and that is hard to find in the same chef!
