About Chad Bowser
Executive Chef Chad Bowser discovered his love of cooking with an Easy Bake Oven at the age of five. By fifteen he had graduated to creating “bear” pancakes for children at Shoney’s. He worked in kitchens and at catering companies continuously while a touring musician based in NYC, often “paying” for the band’s housing by creating new and unusual dishes for their hosts with “found” items from their pantries. Off and living in California he immediately got work as a Sous Chef at Feast which catered within a studio environment to various A list stars in music, film and television. At Feast Catering he learned to specialize in all types of cuisine and in creating dishes to the specifications of high profile clients. On a visit back to New York he was offered a job as a Sous Chef and Chef de Partie at the prestigious Marcy Brownstein Catering creating unique menu items for high profile weddings and parties. Chef Chad then took two years to be the Executive Chef of AMF’s flagship 300 NYC where he created menu items, recipes and specials for the chain and honed his talents for a mass audience. After two years of self taught management, food costing and menu creation skills he left this position to apprentice as a Sous Chef for Executive Chef Jesus Nunez at the Spanish art tapas restaurant Gastroarte. He proceeded to open two restaurants with Chef Nunez in NYC; Barraca, which specialized in traditional Spanish tapas, and Melibea, which was a modern take on Mediterranean dishes. In May he left Chef Nunez to create a new menu and open the Astoria Brewery Katch. Building on Chef Nunez' principle that people first "eat with their eyes" Chef Bowser began to recreate the idea of an upper scale pub menu with only fresh never frozen items. Chef Bowser is just beginning in his creation of a new high end breed of pub food.
