Create innovative fusion menu. Responsible to control variables such as food cost and labor. Use seasonal and local as much as possible. Oversee a kitchen of 10 people. Help to foster a brand for the company by doing networking events outside of the restaurant.

Helps in creation of specials and seasonal menu items. Inputs invoices into electronic inventory tracker. Places orders for produce, meat, and dried goods. Is the saute station on the line while cooking for a sauté heavy menu. Controls specific and special cleaning jobs on a weekly basis.

Is generally the person to man the grill when working. Entails set-up and service of the grill station.

Manages the set-up and break down of the entire line manning either grill or sauté during service. Specifically makes sure to close most night and make sure cleaning is fully finished to the proper standard. Helps in generation of ideas for possible menu items or specials.

Worked in the kitchen prepping mostly for large parties as well as the dinner service. On occasion would work alongside Executive Chef in wine tasting parties, helping to prepare food which would match the particular wine that was being tasted. Also did live meat carving stations at large events such as weddings or corporate parties or golf tournaments. Learned how to break down large cuts of beef such as New York strips and beef tenderloins.

Started off as dishwasher but moved up to line cook capable of running the entire line; including hibachi's, during regular service, with one additional cook on busy days. Learned various skills from traditional Korean/Japanese teaching by the owner and the sushi chef.
