I specialize in upscale cuisine with a focus on fusion. I am experienced in Italian cuisine and demonstrate strong French techniques. I believe that simple food can look and taste better than a complicated dish, when focus is placed on locally sourced quality ingredients, strong and balanced flavor profiles, and the highest standards in regards to execution and presentation. I am extensively experienced with budgeting and all aspects of food and beverage cost analysis/P&L analysis. I am experienced in every aspect of running a professional kitchen in a fast paced resort/hotel environment including but not limited to both Forbes and AAA standards. I also have knowledge of menu branding, concept development, and maintenance. The key to creating any successful kitchen is to simply put-in the effort and build a talented team, one member at a time, by fostering a positive work environment build on the foundation of communication and mutual respect.
