After graduating with my Culinary Management diploma from Humber College I spent 5 years working as kitchen managers for Kelsey's and at Boston Pizza. These experiences taught me teamwork and a passion for the high volume of corporate kitchens. My wife and I then decided to open our own restaurant in 2008 and moved out to rural Ontario. There is nothing like owning your own business. The highs as well as the emotional lows. Learning how to wear all the hats that a business requires forces a certain mental flexibility. One minute your a Head Chef, then a dishwasher, and finally a plumber and maintenance manager. You have to develop the roll up your sleeves and get it done attitude fairly quickly. In the summer of 2015 my wife and I decided that although critically successful we just were not financially able to keep the business going.After the loss of our business I was a bit adrift and after working for a couple of small mom and pop restaurants I ended up taking a job at Erie Meats in Listowel ON as their Cafeteria manager under the R&D Chef William Wallace. To say I had lost my love of culinary work would be an understatement. I was basically on autopilot when I accepted the Cafeteria position. I have mentored a couple of cooks in my time but until I met Chef Wallace I had never had a mentor of my own. I will always be grateful to Chef William for giving me back my drive to work.I worked at Erie Meats until 2019 when, after a long talk with my wife about what I was passionate about and if I thought I could keep slinging 50lb bags of potatoes when I turned 50 I decided to go back to school in a complete 180° from my culinary journey. When I had been in high school I had a strong love of biology and technology. At 44yrs old enrolled in the Biotechnology Technician program at Conestoga College. My hope was to combine my culinary experience with more science based skills. Going back to school to learn a whole new discipline at 44 was hard enough but taking Immunology and Biotechnology classes remotely while having the difficulties of the pandemic all around did lend a different type of stress to the experience. Since graduating I have had the pleasure of working in several different Biotechnology areas including LifeLabs and a QA for a Cannabis producer. I now work with P&P Optica as a Project Implementation Specialist using my knowledge of the meat industry as well as a love of learning to install and commission their Smart Imaging System.
