As an Agriculture and Sustainable Food Security Volunteer, Chelsea carried out agricultural extension activities at the grass-roots level, working directly with the Nicaraguan Institute for Agricultural Technology (INTA), Catholic Relief Services (CRS), local farmers, and community leaders. Chelsea conducted the following activities in Spanish:Helped establish various organic family gardens, not only promoting the use of organic fertilizers, pesticides, crop spacing, and the use of companion crops for integrated pest management, but promoting nutritional advances in the families’ diets. Established various school gardens to improve the nutrition of the students as well as teach them about organic farming methods.Coordinated with Catholic Relief Services to support and advise a women’s baking group in order to expand and better their business in the community using value-added techniques in their baking.Built improved ovens to benefit the women’s baking business in order to make their baking more efficient and to create less of an environmental impact.Assisted in the management of children’s and women’s banks in the community to promote techniques on saving money, taking out loans, and accumulating interest.Organized and initiated the communal construction of a pedestrian bridge with the aid of a local NGO. Helped facilitate a work trip for 40 American high school students to spend a one week visit in the community, helping to construct the bridge and developing a cross-cultural exchange between members of the community and the student group.Led weekly workshops with young women and girls to teach recycled crafting techniques and promote the initiation of a small business to sell their handmade goods.
