STALLS SELLING COOKED FOOD AND PREPARED DRINKSWHOLESALE TRADE

~Control and direct the food preparation process and any other related activities~Construct menus with new or existing culinary creations ensuring the variety and quality of the servings~Be fully in charge of hiring, managing and training kitchen staff~Teaching and coaching team members on dishes, techniques and leadership required~Comply with nutrition and hygiene regulations and safety standards based on industrial standards~Awareness and implementation of waste controls~Work with Procurement Manager or management to plan for orders of equipment or ingredients according to identified shortages~Oversee and appraise the work of subordinates~Foster a climate of cooperation and respect between co-workers

~Develops standard recipes and techniques for food preparation and presentation which assist to assure consistently high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices.~Remains up to date on new techniques and trends in dining so that we can continue to modify the menu to suit our diners.~Maintains awareness of industry trends, consumer requirements and the availability of novel ingredients and processing aids.~Directs and coordinates all food preparation functions carried out in the various kitchens.~Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.
