Curricular internship at the Quality Assurance department of Oleificio Zucchi S.p.A..Main activities: support in day-to-day management and administration activities; reorganization and preparation of a new database that concerns the assessment of suppliers in terms of food safety.The achievement from this experience could be summarized in greater knowledge about: - the assessment of raw material, additives and primary packaging suppliers in terms of quality, food safety and fraud risk;- voluntary certifications recognized by GFSI such as BRC, IFS and FSSC 22000; - other voluntary certifications such as ISO 9001, ISO 14001, DTP 030, Kosher, Halal, DTP 112, DTP 125, ISO 22005, ISO 22000;- IFS guideline on product fraud mitigation;- sensory evaluation of extra virgin olive oil;- Regulation (EU) No 2022/2104 on marketing standards for olive oil;- Regulation (EU) No 2023/915 on maximum levels for certain contaminants in food;- CODEX STAN 33-1981 on standards for olive oils and olive pomace oils.
