As COO, I was responsible for all aspects of the Skinny Pancake's performance from guest satisfaction, financial performance, key team member development, system efficiency, financial forecasting and ultimately meeting our double bottom line of being profitable while serving our mission. Working closely with the CEO and our senior leadership, I helped shape the vision and direction of the company while making key decisions that have an impact to how we succeed both now and in the future. In addition to ensuring the current operations of our 11 brick and mortar restaurants are a well oiled machine, I helped develop new operations and store fronts as we continue to grow into Vermont's next iconic brand.

As the Director of Operations, I oversee and ensure excellence of our flagship restaurant on Lake street, the Skinny Pancake; the Chubby Muffin; Have Your Cake Catering; our mobil operations including our carts and festival tour; all three of our restaurants at the Burlington International Airport; our Montpelier restaurant; Sugarbush; UVM as well as oversee the food hub responsible for all the local food buying and production. I work directly with the owners on the general direction of the company, providing insight and guidance for the overall direction of the company. I currently oversee all aspects of operations, facilities, human resources, development for the Skinny Pancake, over 7 million in sales with over 200 employees and a management team of 35.
