Began working in the Chicago service industry as a line cook at Hub 51 restaurant, part of the Lettuce Entertain You network. Beyond the traditional responsibilities of a line cook, I also receive additional training as an apprentice (as part of my ongoing culinary school education). Daily responsibilities include prepping ingredients, cooking on and helping to manage the line, taking inventory and placing large orders for the restaurant, preparing large catering orders, and managing parties/events (both on- and off-site). Additionally, I helped develop a new menu item that is now part of Hub 51's daily offerings.

Helped launch a start-up restaurant specializing in Peruvian food as a sous chef. What started as a small, two-person operation out of a ghost kitchen is now an established restaurant with a brick-and-mortar location, mobile food truck, and retail positioning/sales. My daily responsibilities included recipe testing and development, running the line for dine-in and carry-out orders, and preparing large-batch quantities for catering events and farmers markets. Additionally, I was involved with bringing two of our menu items to the big-box retail space and helped spearhead their development, packaging, and quality control processes.
