• Led the strategy that completely turned around financial results of 63 restaurants and streamlined operations by re-engineering the menu and standardizing procedures to reduce ticket times by 45 seconds and food cost.
• Revised Fixed and Variable Labor Matrices, matched sales classes in a timely manner, and adjusted operating hours to reduce labor costs by 1.2%.
• Increased service standards by implementing Quick Evaluation program used by the Area Supervisors to evaluate restaurants and to ensure consistency within each of the 63 locations.

• Turned around an underperforming chain of six Mexican restaurants for Eldorado Management, taking the concept out of receivership by implementing cultural change, creating a new menu, reducing COGS by 5%, and.
• Developed business plan for CDB Investments that grew sales from $12,000 to $18,000 weekly for a local independent restaurant that was in bankruptcy and turned around location by reducing COGS from 45% to 31% and.

• This was a short-term executive leadership position where I partnered with a start-up Dunkin Donut franchisee and was instrumental in creating all of the systems and policies for the franchisee.
• Successfully opened the first three locations, hired/trained management team and staff, established manager accountability at each location, and implemented Dunkin Donut’s operating system to maintain brand consistency.

• I was hired to turnaround underperforming restaurants and I was successful in providing leadership direction for overall operations that increased profitability of 10 locations.
• Increased controllable profit 50% in three years by reducing employee turnover from 200% to 105%, improving service and food quality, substantially decreasing labor/food costs, implementing a preventative maintenance.
