Duties included receiving and analyzing pre-harvest berry samples, analysis of must and wine samples during fermentation (pH, TA, Brix, Temperature), gathering and recording tank samples 1-2 times/day, daily CO2 additions, preparation of yeast for inoculation, monitoring cap and must temperatures during red wine fermentations, lees stirring for white wine barrel fermentations.
