Currently working as Food & Beverage Manager and head of the F&B department at the Sumba Hospitality Foundation, a non-profit vocational hospitality school on the island of Sumba, Indonesia. In my role as F&B Manager I am leading the team in two restaurants; one is part of Maringi Hotel, focused on sustainability and using local ingredients to create a fusion of Indonesian and Western cuisine, and the other is an independent 'Warung' style restaurant that serves local Sumbanese cuisine, also using local ingredients primarily sourced from the Sumba Hospitality Foundation's two permaculture gardens.In my role as head of F&B department I have designed and taught a comprehensive 11-month curriculum to 21 passionate Sumbanese youth aged 17-23 years old, which has now been permanently implemented by the Foundation. This course combining practical and theoretical education to prepare the students for a 6-month internship in one of Bali's many luxury hotels or restaurants, and later a successful career in the hospitality industry.
