Cafe Manager/Bar Manager

Cafe Rubis

Dublin

I mainly worked front of house, managed the staff, delegated tasks if needed, also served customers and made sure that everyone was served and that everything was going well.During some of the quieter shifts I sometimes worked on my own, so I would serve all our customers which included making food, serving wines, making coffees, doing dishes and keeping the bar clean.I also did the stock take, checking what wines and food we are low on so we could order more and keep them in stock.I trained new employees, delegated tasks, dealt with any problems if one arised, and dealt with any issues that customers or staff may have had. I also met with current suppliers and potential new suppliers, trying new potential wines and helping decide if it is something we would have liked to sell.I wrote a 20 page employee manual, explaining all the jobs that's required of employees, health and safety requirements should they require a refresher, and step by step instructions on how to make every food item. I often updated the manual when the menu is changed.I managed the function room for private parties. This included taking bookings, communicating with the people arranging the function, helping set up the room, making sure we had everything requested for the parties and ensuring they ran smoothly.Whenever my employer was away, I would take over his duties and run the bar. During these periods I dealt with rosters, collected and paid for deliveries, and sorted out the wages, while also managing the floor and doing my other usual duties.

Expeditor And Barista

Dublin, Leinster, Ireland

I worked mainly as an Expeditor, or as its commonly known, working “on the pass.”I was the only line of communication between our kitchen and the rest of the staff. I made sure all dishes go out correctly, they look presentable, that they go out on time and talk to the chefs about any customer requests (excluding something in a dish, allergies, etc). I would also call customers over our microphone to pick up takeaway food, making sure they have everything they need, and directing them to the cutlery. While “on the pass” I also occasionally seated customers if our host was busy and deliver food to tables if the waiters were busy taking more orders. I also did some barista shifts, making coffees for our customers, cleaning the coffee machine and coffee area and working the till. While doing the barista shifts I also serve other drinks that have been ordered such as soft drinks, wines, spirits and pints.
