As Kitchen Manager, my daily responsibilities include developing junior managers, staff development, product ordering, labor management and quality assurance. Additionally, I have held responsibility in every department of the restaurant, to include the following: Bar/Beverage Manager: I have increased efficiency while decreasing cost in my restaurant. I have recognized and enforced training and continuing education as a major pilar in our restaurant's bar. As the highest profit center of our restaurants, I believe it is vital that this area is a continuous focal point for manager and employee development.Cook/Prep Manager: In this position, accuracy and time management are key. I recognize that again, a well trained staff with continuous coaching is the only way to meet the highest of standards with consistent efficiency.Purchasing Manager: In this position, it is important to recognize and anticipate the restaurant's needs by analyzing upcoming sales projections, current usage, and proper utilization of all items. In this area, I am able to not only increase profitability, but also coach junior managers on the standard and purpose of recipe accuracy.
