I ran a thoughtful program that was dedicated to a seasonal and local menu. The chef, the beverage director and myself flipped the menu from a a-la-carte style to a pre-fix that was centered on a region of the world. We did food and cocktail pairings for each course. It was successful and starting to take off before the pandemic occurred. I solely kept the restaurant open. I was the only employee from March 2020 to April 2021. I made all the drinks, made the food, and served the tables. I only left with the support of the ownership to take on a consulting roll before moving to Colorado.
