One of the biggest challenges facing the world today is how we feed a global population whichis set to grow to over 9 billion people by 2050. There is a need for change in traditional agricultural systems to provide more food using less inputs. There has been a lot in the news lately about growing insects for human consumption...well I am growing insects, but not for human consumption, instead, as a more sustainable source of protein for animal feed.We aim to meet these challenges with our closed loop, zero waste aquaponics facility producing sustainable insect protein, lettuce, herbs and organic farmed fish. We are using as little inputs in this system and making use of all the by-products to create a more sustainable and local, year-round source of lettuce and fish for local restaurants. In effect the food, plants and fish produced from this facility will be produced with no degradation of the environment. The insect protein, fish food will be produced in house, the nutrients for the plant growth will be produced in-house with no discharge of any waste products.

Restaurant ManagerElbow Lane Brew & Smoke House Sep 2014 - 2017Cork City, IrelandManaging in a high pressure restaurant specialising in smoked foods and in-house craft beer. It was my role as the manager was to set up and organize staff and to ensure the brewery, bar and kitchen all worked in unison. During my time as manager I worked in every position from the floor, bar, kitchen and wash up so I could see the issues met by the staff and implement changes to improve operational systems and improve productivity.Training in product knowledge was a large part of my duties and ensuring staff understood all dishes and how to pare these dishes with the right choices of beverage as well as understanding our brewing process and how we make our specialized (German Purity) beers. Other duties were doing the daily maintenance, weekly orders, stock take, counting tills and doing bank drops. I always took time to talk to the staff and listen to any ideas on how they would improve service as well as all was trying maintain high staff morale inside the workplace.
