Kays Kitchen is a family-run restaurant chain that prioritises fresh ingredients, locally sourced. I was mainly based out of their refitted and upgraded restaurant in Lucan, Dublin, where I worked alongside a team of chefs, bakers and caterers serving fresh food. I also worked at their concept restaurant Frameworks Café.Main responsibilities:- Barista, deli assistant and sous chef- Assisted in daily management operations e.g opening and closing the store- Managed stock control, placed orders and handed deliveries - Maintained store cleanliness and presentation- Monitored sales activities - Trained new employees

The Cliff at Lyons is a 4-star hotel, restaurant, wedding venue and cookery school in Celbridge, Co Kildare. During my time there I started out working as a barman, at first specialising in cocktail making and bartending weddings and corporate events. During my 5 years there, I gained an in-depth knowledge of the inner workings of this business and moved into a more supervisory role. However, when this establishment ran into some financial difficulties in the summer of 2015, I left this role to explore working in the food industry.Main responsibilities:- Running cocktail master classes, for corporate events- Organising and running elaborate wedding, and private party drinks receptions - Working with the duty and event manager in coordinating and planning functions- Supervising weddings, corporate and private events- Prepared schedule for bar activities as per operations requirement- Supervising efficient working of a team for all bar operations- Assisting in sales, profit and cost control- Keeping accurate records of stock lists and the placing of stock orders
