Founded in 2021 after too long a time in lockdown, much of it was spent baking and recipe testing. Second Street Bakeshop is an award-winning confectionery company making toffee brittles and sweet treats. Primarily sold online via www.secondstreetbakeshop.com and through retail locations including Super Valu and independents throughout Ireland, the company is influenced by my good friends at Neo Cocoa and my paternal grandmother who was known for making toffee with her grandkids.

Founded and led Clairesquares, a nationally award-winning, San-Francisco based, artisan baked goods company. Manufactured gourmet, Irish sweet treats, handcrafted from premium ingredients within a zero food waste kitchen. We collaborated with Haagen Dazs in 2015 on an artisan ice-cream flavour and received press from Food & Wine, Fortune, CBS, San Francisco Chronicle, Martha Stewart and more. Originally a La Cocina food incubator member, we operated the business across several channels including online, corporate, specialty grocery/retail, gift and food service.

Performed site investigations to remediate soil and groundwater contamination and provided remedial evaluations, litigation support, field oversight and reporting.

Provided support to both civil engineering department and environmental services department with a focus on sustainable waste management within the councils' geographical region as part of M.Sc thesis.
