It enables any protein - meat, fish, even vegetable protein - to be tenderised cooked and vacuum packed in such a way that all pathogens are knocked out and the product becomes shelf stable for over 2 years at ambient temperatures. By eliminating the need for refrigeration in transport and storage large cost savings are achieved. This has big implications too, for hot countries with less developed chill chains.In addition the two step processing enables less expensive meat cuts or fish species to be presented with the same flavour and texture profile as far more expensive forms.
