Chestnut Academy - 3 month periods in 6 different hotels, restaurants and public houses followed by a similar period within the Groups Head Office, working through each department and discipline within the Group over a 2year period, inc Hotel, Restaurant and Bar Management, Events, Food and Beverage, Duty Management, Staff scheduling, HR, Training, Performance Management, Reservations, Stocktaking, Health and Safety, Financial Planning, Budgeting and Forecasting etc etc.Since completing the Academy I have occupied a newly created multi site Managerial and Head Office role providing cover for General Managers of individual sites when absent or being replaced, providing training to incoming GM’s to familiarise them with the standards and processes operated within the Group and ensure consistent adoption of best practice procedures throughout the organisation and also assisting the reservations team.
