Here I oversaw students undertaking higher and further education in the restaurant and bar areas of the two college restaurants. I reviewed the systems on the bar and implemented new operating systems, checklists and standards of procedure. I also lectured students studying for a National Extended Diploma in Financial Control and have experience in guest lecturing from my time in industry in subjects such as Marketing a small business, Restaurant Management and Staffing and Recruiting.

GBE was a modern British take away which specialised in fish and chips. My business partner and I started the business and I had first-hand dealings with each and every aspect of the enterprise from its inception. From the planning stages, marketing, creation of systems and standards, due diligence, staff training, stock control, banking and the day to day running of the business. GBE was awarded top marks (5H's) in its first audit by E.H.O - a very rare accolade for an independent business. GBE was also awarded a prestigious five stars from Seafish (independent regulatory body for fish and chip shops); we were the first shop to hold the award in the Midlands. In February 2010 GBE was named England's No.1 fish and chip shop - the highest accolade that any shop can achieve.

Après is a bar and eatery located within the busy commercial development Broadway Plaza. As GM I was responsible for managing all aspects of the business. Après bars demand working to strict targets regarding stock and cost management, which although challenging provided me and my team with clear goals which were met with enthusiasm. Again my role called upon my ability to train others and appraise their continual development, while ensuring that the business grew over time, while meeting set targets for turnover and stock control.

The Cock Inn is an extremely busy gastro pub with an average weekly turnover of +35k. During my employment I dealt with every aspect of the business including finance and human resources. During busy periods I was responsible for a team of up to thirty people. During my employment I instigated regular staff training and appraisals which I believe improved the level of service within the business markedly.
