Organikos offers "taste of place" products within Authentica shops and also through subscription. Coffee was the first product offered in 2019 and other product lines are being introduced in 2023. Organikos and Authentica are extensions of the work of La Paz Group over the previous two decades. La Paz Group is a management company focused on the startup and ongoing management of entrepreneurial conservation ventures. We started in Costa Rica in 1999, with Lapa Rios as our first property under management (1999-2003). Xandari became a client in 2004, and today is an intimate brand with one property in Costa Rica and three in India. Other lodging clients included Villa del Faro, an off-grid lodge on the East Cape of Baja California Sur, Mexico, and Chan Chich Lodge in Belize. All properties we developed and managed collaborate with their surrounding communities on entrepreneurial approaches to the conservation of natural and cultural heritage.I began my career in restaurant and hotel operations, culminating with Restaurant Guy Savoy, 1981-1983. My next work, as an organizational development consultant focused on hospitality industry clients, led to graduate studies at Cornell University. My doctoral dissertation provided a foundation for the entrepreneurial conservation work I have been involved in ever since. In 1995 I accepted an offer to join the Tourism Competitiveness & Sustainable Development project, facilitating innovation in Latin America’s emerging “green” destinations. My focus since then has been on entrepreneurial conservation, working first with emerging destinations on development strategy, and then for two decades primarily with private sector conservation-focused investors and lodge owners.
