Flour and Barley San Diego is the second pizzeria of if its brand located at The Headquarters in Seaport Village, down town San Diego. We serve wood fired brick oven pizza, pasta, fish entrees, along with salad and appetizers. Our pizza dough is made with a sourdough starter that was grown from two cultures from Italy. I was part of the opening team setting up vendors, organizing the kitchen, hiring and training staff. I am in charge of all kitchen aspects from maintaining a tight budget, keeping labor cost low, upholding a strict health code ensuring food safety, quality of food and presentation, menu changes, pizza making classes, beer pairing dinners, media demonstrations on local news stations promoting our business, and working closely with the general manager on a daily basis to keep our restaurant busy and in tip top shape.

The Barrymore is located inside the Royal Resort. A small upscale steak house. I assisted the Chef de Cuisine in all aspects of the kitchen from managing staff, ordering, scheduling, creating menu items, maintaining our budget to working the line as needed upholding the quality and presentation of food and sanitation standards.

Public House Gastro Pub is located in the Venetian Hotel and Casino. I manage back of house employees, order all necessary items from an array of vendors, perform weekly inventory, help create seasonal menus, calculate food cost, maintain food safety standards as well as enforce all aspects of the Southern Nevada Health Code, train employees on all stations of the kitchen, uphold the highest quality and presentation of our creative and outgoing food items, as well as assist my Executive Chefs in any means necessary.

Holsteins Shakes and Buns is located in the Cosmopolitan Hotel and Casino. This is a high volume gourmet hamburger resturant. I worked all stations including grill, saute, pantry, and fry station. I also helped open this restaurant by organizing and setting up the kitchen.

The LBS Patty Wagon is a new food truck that goes to Las Vegas events and high volume companies for lunch breaks. I cooked on the truck for busy lunches and dinners serving sliders and fried foods. Aslo helped gather business by going into establishments as a sales person.

Cooked on all stations including grill, pantry, and fry station. I helped open the restaurant by organizing and setting up the kitchen also helped with ordering and quality controll.

Prepared famous Hoffy Hot Dogs on a high level of business at Planet Hollywood Hotel and Casino. Helped open the restaurant by organizing and setting up the kitchen.

Worked at the fine dining restaurant called Tableau in the Hotel. Cooked on all stations including pantry, saute, and hot apps. Preparing meals for executives including Steve Wynn him self and guests for breakfast lunch and dinner.

Help prepare and execute BEO events for small and large parties. Also worked for a resurtant in the hotel called The Ships Tavern wich served lunch and dinner. Worked all stations including pantry, saute, fry station.

Breakfast and lunch cook at a small cafe. Cooked on a crepe iron in an open kitchen.
